Best Italian Pizza!!!  When I had a pizza at La Stella, I thought I was in Tuscany having one of their wonderful pizzas.  The whole meal was great!  We started with a drink – Prosecco – Valla Teressa (Organic), Kale Caesar, Pizza and Panna Cotta.  Go and enjoy for a real taste of Italy!

Our Story

LaStella is about sharing our passion for fresh ingredients handled with attentive care using old world methods and technique to bring you our version of what Nana Zuvich would make. This is why we chose to import Nanaimo’s first wood fire pizza oven and why we create hand made pasta from scratch each and every day. For the gluten-sensitive folks out there we also make fresh, gluten free pasta by hand using our own in-house recipe.

Our passion is fresh, seasonal ingredients handled with care and attention using old world methods. Simple prepared dishes with minimal ingredients lets the products of Vancouver Island shine. Our wood-fired oven is the center stage, churning out our version of Napoli style pizza. Cooking at 900ºF, our pizzas are finished in about 90 seconds resulting in a fresh, crisp yet chewy crust, with slight wood fire char, The best in thin crust methods.

From our dough to our sauces, our meats to our pastas, everything is made in-house using the best of what the season has to offer. We hope you enjoy what we believe is a very special little Trattoria.

Groups

For groups of 8 or more people we offer a family style fixed price menu ($31 per person) – plates for sharing arrive at the table as they are prepared to best facilitate the tasting, laughing, and passing around of food which we believe is the cornerstone of the Italian meal experience. This ensures that you will have a lovely & fresh, thoughtfully balanced meal of highlights from our menu (including antipasti, pizzas, pastas & dessert) without lightening your pockets too much. If one or two folks don’t feel like sharing due to strong preferences or dietary restrictions, they are welcome to order à la carte for themselves.

Fresh baked in-house every day – Light and crispy perfection! Served with balsamic vinegar and extra virgin olive oil.

Taste the diversity of Italy’s terroir. Three varieties of single origin extra virgin olive oil, each expressing a different region of Italy from grassy to spicy notes.

Beef Carpaccio $14

Forno-seared Organic, Grass-fed Beef, sliced paper thin and garnished with in-house pickled vegetables, house mustard & cipollini marmalata.

Warm Marinated Olives $9

A mix of 5 varieties of olives, marinated in rosemary, citrus peel and olive oil. Served warm.

Meatballs $13

The Stella classic! Pork meatballs flame roasted in the forno and served with a slice of house made focaccia, tomato sauce and grated pecorino cheese

Beaded Mussels $13

Inspired by a trip to Puglia, SSI mussels stuffed with chard, breadcrumbs and herbs, toasted in the forno and accompanied with a luscious tomato sauce for dipping.

Grilled Asparagus $9

Forno-grilled local asparagus, tossed in our house beer vinaigrette w/cured egg yolk.

Pear & Radicchio $15

Sweet & bitter harmonize with red wine poached pears and grilled radicchio alongside a balsamic prosciutto vinaigrette.

Kale Caesar $14

Classic caesar dressing with locally sourced, organic kale, housemade croutons, crispy pancetta and parmesan cheese.

Chicken Panzanella $15

Tuscan-inspired bread salad with local, organic greens, hazelnuts, vinaigrette and delicious crispy-skinned chicken (de-boned and rolled in its own skin).

Local, organic mixed greens from Nanoose Edibles w/grapefruit, hazelnuts and shaved parmesan.

Pizza

Our impossibly light pizza crust is fermented for 3 days to develop its deep flavour and pillowy texture. Each dough is then hand stretched to order before being topped with fresh ingredients and baked in our 900ºF wood-fired oven creating the characteristic char markings of true Napoletana style pizza. All pizzas are 12”.

Carbonara w/Pork Belly & Egg Yolk $15

Our hand-rolled Spaghetti noodle is the base for this creamy and decadent pasta with tender Pork Belly. We cook the yolk slowly at low temperature to produce a lusciously creamy egg yolk on top.

Pappardelle Bolognese w/Fried Egg $15

I once asked an Italian Nonna for her bolognese recipe… After multiple background checks, several people “vouching” for me and 2 promises later, she acquiesced and told me how to make it. I present it to you with our wide, hand-made noodles and a fried egg on top!

French Toast w/Tiramisu Crema $13

Ryan Zuvich has been cooking for some time now. He’s cooked in some pretty amazing places with some pretty amazing people and counts himself quite lucky for the experience.  6 years ago he and his wife moved to Nanaimo and continued to meet some pretty amazing people and have created a couple of pretty amazing places to share with their new friends. The goal, if I understand correctly, is for Ryan to continue to meet some pretty amazing people and build pretty amazing places for the years to come.

Ed is on a quest to make the perfect pizza, a journey started some 15 years ago.  Along the way, while apprenticing as a potter building cookware, he found himself immersed in the ‘simple’ food of New Mexico cooking exclusively with fire and building adobe hornos by hand (including the bricks!).  It turns out New Mexican and Italian cuisine are kindred spirits.  After a stint in Italy followed by a return to Vancouver just as the pizza renaissance was in full swing, he continued to develop his understanding of preparing exquisite, simple food before being asked to join the opening team of  Ask For Luigi – Vancouver Magazine’s top picks for Best Restaurant & Best Italian of 2014.  Ed is honoured and humbled to be able to work with beautiful ingredients and age old techniques every day.

FAQ

1.Do you have gluten free options?

We have worked hard to develop an in house, hand made gluten free pasta that we swear you won’t be able to tell apart from a standard noodle. We have several gluten free options for our appetizers and salads. Unfortunately, gluten is required for our pizza dough.

2.What's this I hear about fermented dough being easier to digest?

Glad you asked. We use a three day fermentation process for our pizza dough. During the fermentation process, natural enzymes break down the starches, extracting their natural sugars along the way. This is what creates such a depth of flavour in our pizza crust. One byproduct of this process is that these same enzymes are doing the work your digestive system normally does allowing the wheat (and gluten) to be digested more easily by your body. Gluten sensitive folks have reported that they don’t feel any unwanted effects after eating our pizza!

4.Do you accept large groups?

For sure we do! We welcome your large parties up to 14 people. We kindly ask that for parties over 8 people you pre-order your meal for the most efficient service. Please see here for more details.
